Super cliche: When it’s that time of the month, I crave chocolate. In the past, not a day went by that didn’t have a little cocoa goodness in it. I had a big sweet tooth! However, since I’ve transitioned to a more whole foods and paleo diet, I’ve come to crave sugar a lot less. It’s a great thing! Thank you Melissa Hartwig and Whole30.
But still, hormones. And my baby starting kindergarten last week. So emotions. Thus, every now and then, chocolate is highly necessary.
The other day I ran across a recipe on one of my favorite healthy blogs, Kath Eats, and I knew it would be just the thing for my chocolate fix. However, I have a dear friend who I like to share treats with. Get this: She’s a baker and most of the time she cannot eat a single thing she makes! So I adapted this recipe to share with her, making it a treat that we could enjoy together. The result is a delicious little that’s like a cross between a chocolate-dipped coconut macaroon and a truffle. It’s a little bite that’s perfect for sharing with a girlfriend after a healthy salad. Or pulling from the freezer because it’s that time of the month. Either way, you should make these to have on hand when the need arises.
I-Feel-Like-A-Woman Energy Bites
1 cup pitted medjool dates
1/2 cup raw walnuts
1/2 cup raw cashews
1/2 cup cocoa powder
1/4 tsp kosher salt
1/2 cup gluten-free old fashioned oats (I like Bob’s Red Mill)
1/4 cup unsweetened coconut
1/2 tsp. almond extract
1 T. coconut oil
1 T. coconut cream (I just skimmed it from the top of the can of Sprouts full-fat coconut milk)
Directions: Blend medjool dates in food processor until they resemble a ball of paste. Add other ingredients until blended to a uniform consistency. Measure out by the tablespoon and roll into balls. This made about 16 energy bites for me. But I may have eaten some of it before it turned into a ball. Don’t judge.
